Louie's Spiced Holiday Ale

Ingredients

7.5 Lbs Unhopped Light Malt Extract
3.0 Lbs Honey
0.5 Lbs 10L Crystal, 40L Crystal, 80 L Crystal and Victory Malts (Each)
1.0 oz Galena Hops (AAU 11.7%) (60 min boil)
0.5 oz Fuggle Hops (5 min boil)
6.0 oz Fresh Grated Ginger Root
1-1 in Cinnamon Stick
6 ea Lemon Zest, Orange Zest, Lime Zest
6 oz Fresh Grated Lemon Grass
¼ tsp Irish Moss
32 oz Wyeast 3021 Champagne Culture

First of all, Remember “Relax, Don’t Worry, Have A Home Brew”, if you don’t have some of the ingredients, or would rather not use them, just modify the recipe to suit your tastes. Otherwise, brew this as you would any other Extract/Specialty Grain recipe. Put all the spices in at the beginning of the boil.
